You have askill level and your skill level affects the roll outcome representing your character's ability. I prefer that any day over invincible dodge rolls that represent nothing but the player's ability to push a button at thd right time. My reflexes shouldn't be a factor in my character's ability to avoid damage.

This is only a thing in BG3. The devs who made the old infinity engine D&D games or even modern D&D inspired games like Pathfinder understood that this is not fun for players, so rolls are only a thing in combat where they happen in the background, whereis skill checks in dialog options are always a success when your character has the required stats and if he doesn't then the option simply doesn't exist or is greyed out.

Because devs are under the delusion that making you fail a dice roll on a choice you’ve already committed to adds "tension" instead of just making you hate the game. It's not meaningful when you're just praying to RNGesus instead of thinking your way through a problem. Might as well be flipping a coin to see if you enjoy the story today. At least the old CRPGs respected your build and didn't waste your time with "lmao you tripped over your own boots" every time you tried to talk to an NPC.
