I get the point that there isn't a whole lot of compelling worldbuilding to be done about a species that just wants to kill and eat people, but the problem with modern writers is instead of trying to come up with a believable dimensional species that has its own alien psychology they simply just make the species into humans.
Humans, for one, are pretty confrontational on a species scale. They need constant adversity in some form, be it a holy crusade or a videogame where they go on a holy crusade. You could have some species of demons whose fundamental psychology makes them constantly want to conquer, dominate, and subjugate others, leading to various tribes of warmongers and slavers, and you could sprinkle a in a few weirder demons who integrated into some regular society and channel this desire to be ultra-competetive and above everyone else into becoming top of the field scholars, athletes, or reach leadership positions. Few people trust them because they know these species of demons are control freak assholes, but the cunts pay their taxes and, make research breakthroughs, and autistically organize complex infrastructures no normal human could.

I see your logic, but this is simply untrue, thats the logic that troons used to justify their troonification. To the exent that people fatigue of something, you dont have to subvert it to gain market share...allow me to give some examples:

War games used to be ww2 exclusively, when market saturation peaked, the solution given by straight white men was not "clown costumes in ww2", but "now lets do iraq", as fatigue set in on mid-east conflicts, some continued on or began remakes, while others went into the future with drone warfare, or further in the past with ww1 settings.

Zombies were once all the rage, and all at once they were no longer the rage, even the king of zombie games, RE, tried to reinvent itself first by becoming absurd (re6, though it started in 5), but after backlash, decided to drop the "hordes of mindless dead" and go for a whole family of nemesis, and it paid off.

Nothing has top it movie wise
A different kind of "fantasy" was attempted with Dark Crystal, it was fabulous, enchanting and different, and Netflix pulled the plug.
Something close to good fantasy but still miles behind Dark Crystal would be Breath of the Wild.
Under Breath of the Wild, 50 miles deep, is the first two harry potter movies.
And everything "fantasy" under that is magma core deep trash.
This past 25 years haven't been kinds to the good fantasy genre.

above all else they just want to follow their whims, and they have little to no capacity for empathy, especially with mortals.
they're not necessarily "evil," but many of them are perfectly alright with doing things which have evil ends.
one of them wants to reroute a river for no real reason? he'll go ahead and do it, never minding that it could ruin the lives of all the mortals who depend upon it.
one of them gets a liking for a certain mortal? sure, I'll use my powers to help you out, even if you want to become a warlord and engage in ceaseless slaughter.
but they, when a "favored person" suddenly starts getting cocky, that's when he's most likely to be abandoned.
of course, different ones have different priorities, and the powers of a "demon" CAN result in what we'd consider "good." one of them grows a fondness for a particular mortal who just wants to heal the sick and feed orphans? well, looks like that's a "good" "god"
