Yes, it's a really good entry for beginners. Game's standalone, you don't miss anything by starting with it.
Be aware though that the game has some extreme motion blur which you can't turn off through the in-game settings, but there's a very easy fix for it here

It's a super casualized demake that changed nearly all longstanding core mechanics into a bastardized version of themselves, including changing or outright erasing core mechanics that made sense narratively in the original and no longer make sense now
It was a low effort cashgrab for roping in casuals who don't really care about the series, especially people who played the Octopath games since it uses most of the same mechanics as octopath now instead of playing like a SaGa game

Pick whatever looks interesting to you and play it, even if most of the core mechanics are the same thoughout the series all games try different things, RS2 has the generation system, the GB games are simple dungeon crawlers with racial mechanics, RS1 and RS3 have open ended progression with multiple main characters, SF1 mixes the GB setting with RS' open ended structure etc.

I actually did play and finish FF Legend as a kid, but I didn't know until pretty recently that that was a Saga game. I didn't even have a Game Boy but my best friend let me borrow his for a while. It was fun back then but probably not what I'm looking for now. RS2 does look cool but I'm disappointed that it's been casualized. I never played Persona before this year and I played P3 Reload and realized I probably fucked up and should have played the original.

the gameplay in saga games is always built for the specific needs that the game has. theres always some kind of goal to the systems and how they interact with each others. the remake isnt like that. they added in "time line battles". why? because EB had that. do they do anything interesting with it. not really. it's just there to telegraph epic enemy attacks. and show what combos you can do. compare to the minstrel song remake where the combat is a roided mix of frontier 1&2 and unlimited carefully weaving in mechanics from those games.

There is slight censorship of the Turnip calling Asellus a "retard", he calls her stupid instead. T260G is also referred in a plural sense throughout the game, despite implications that she's a female robot.

It's largely unchanged coming from the original, even all of the exploits and good glitches the original game had are still there, only real difference is that the game warns you about points of no returns or some of the more obscure quest triggers now and you can run away from fights.
It actually adds a lot of cut content too and has a much better NG+ function, you can trust all the SaGa remasters.

It's been so long since I played the remaster. Your party still took LP damage when downed, right? It felt like LP death was barely a concern in Revenge of the Seven, since it seemed like downed party members were unaffected by further attacks. Though maybe it was just because RS2 remaster was my first experience with the series and I hadn't yet adjusted to its quirks.

Yes. aoe attacks hit downed party members. and some undead monsters would specifically single target dead party members.
