Those are REMAKES not remasters. A remaster is a port with changes made to the game, usually to try and "pretty" it up for modern expectations but the original developers rarely worked on them so they don't have the originals artists and usually they fuck stuff up.
REMAKES completely remake the game's assets and most of the time gameplay from scratch. People dislike the remakes of silent hill 2 because it fucked up a bunch of stuff.
Resident Evil 2 is barely the same game so I feel like it kinda earned a right to exist by having completely different gameplay.
