I like Oblivion's artstyle. Just feels like a fairytale.
Skyrim is shallow after a while (in the words of TB: an ocean the depth of a puddle).

Oblivion endgame gameplay of having amazing movement and jumping clear over buildings and around the landscape is great, but Skyrim has better quest and world design.

I think stripping down the games to its base mechanics like what team ico did with Shadow of the colossus is a step in the right direction.

After that just pick which mechanics are actually fun. Add new ones, or take boring ones from past games and try to make them fun.

Skyrim showed us that the formula stripped down to its basic mechanics can still be great and immersive.
