How do I outrun this dude in the cathedral's basement. Can't beat him I don't have anyone in my party and nothing to protect my arms.

Use a bear trap

You don't, unless you have a clear getaway to another screen you have to fight. Avoid this area until you can beat him, in the meantime reload and try again.

Bear trap works if you've got the timing right-he'll stagger just long enough for you to break line of sight and get upstairs. If you’ve only got a booby trap, it’ll slow him down a bit, but not enough unless you chain it with a door slam or pillar dodge. You can also kite him around the ritual circle if you're desperate, but one mistake and he’ll take your arms clean off. Honestly, come back with some actual gear unless you're going for the masochist route.
