free-roam jetski was antithetical to platforming but could have easily been done in a way similar to the great wall if they wanted.
motorcycle doesn't have the same stakes as the hog/polar stages because there was no death state, it was just a race and you either got the crates or you didn't
in both of the above vehicles you cannot jump, you're glued to the floor of the stage unless it gave you a ramp.
To not have the jump button actually make you jump in a platformer is the biggest of farces (both the jetboard and jetpack in Crash 2 are also guilty of this). They could have had them be much more close to the hog stages but chose not to in pursuit of being different, and while they were definitely novel, they were not nearly as good.
If anything, the jetski and plane levels were them taking advantage of the free roaming camera that they were developing for CTR in parallel with Crash 3, so for that I can sort of let it slide as an opportunity to show off their new tech. But from a game design perspective I can criticize them for not being platforming.
