Any guy who jet sets has plenty of girls waiting for them wherever they end up and will turn down anyone who gets clingy. Sonic can go wherever he wants whenever he wants, on foot or with the Tornado.

Sonic isn't interested in romance, he will flirt with women and probably fools around, but he doesn't want to be in a romantic relationship, not only does that not do anything for him, but being in one would stifle his personal freedom.

The original concept back in the 90s involved Sonic "rejecting" her simply because he saw her as an annoying kid/fangirl, but he saved her anyway since it was the right thing to do. Also because it pissed off Eggman.

Sonic and Amy were intended by the original devs to be the opposite of Mario and Peach.
