How do we know if something is genre defining when it just came out? We didn't really see BoTW's influence until games like Elden Ring came out. Maybe we'll see more platformers with destructible terrain in a year or two.

Everything now is too iterative to be genre-defining. BOTW is supposed to be it but we already were under attack from an onslaught of open-world games. It didn't stop. So i can't say it defined its genre. The most popular stuff of last gen and this gen aren't ground-breaking. Last year's GOTY was a platformer throwback. Clair 33 is an RPG throwback. nothing's defining genres.
