Difference is, delisted games on itch got removed from your library, on steam they were kept in your library, you just can't buy/get them anymore. Neither of these companies are really to blame since it's the payment processors. If you'd argue they should lose all methods to pay for any games on their platform (and thus delist all games, and make the companies lose all their income) then you'd be a retard.
