This is a neat idea though. Milennials destroyed pixelart with their corpowoke thin-leg mixels. You can achieve a very similar effect using heightmaps and drawing billboards per point instead of vertex, and then just not allowing player viewport rotation and adding some nice sprites for trees and backgrounds

Keeping that level of pixel art detail for a whole game is unrealistic, the actual inspiration has been there forever, many games like Daggerfall went for that style

What AI can actually add is the production power to put a pre-existing inspiration into practice. But luddites discard the simple possibility of it, for whatever reason.

The clip looks the way it does because everything in the clip has the appearance of a flat sprite viewed from one angle
The perspective IMPLIES that this is a videogame where you can turn and view the scene from another angle, but you can't
If you were to make a game where the player could turn and view things from another angle, they would cease to look like flat sprites being viewed from one angle and the scene would no longer look like this
The art style used for everything in the image is a rough impression which uses very minimal detail to create an impression of the object it wants to represent. The style itself does not follow any rules which would allow for objects to be rotated, since every single frame of rotation would require a new minimal artistic interpretation of the object to be invented from scratch which would not be consistent with the previous frame

The clip is just AI generation. Have you wondered why the people generating these aren't just asking the AI to turn around?

It might be doable if it's actually a mix of 3d models with simple and heavily stylized textures. Lighting and post processing would also need to be limited to a very small color palette.

Retard, it's in first person and they went to the trouble of having an irrelevant 5 degree "turn" which doesn't change the perspective of anything but implies that you can turn the horse. Anyone imagining a game which looks like this would of course assume the possibility of turning the horse or at least riding forwards for more than 5 seconds so that your perspective of the environment would change in some way. The only reason these clips are enticing in the first place is the implication that you could move around within this world and the question it plants within your mind of what that could look like, because you can't comprehend what it would look like to "turn a camera" in this example which wants you to believe it's a 3D world

You can't imagine what that would be like, because the style used to represent the background only makes sense in 2D

Not necessarily, there are ways of making 3D models look indistinguishable from sprites except also being able to rotate around and capture lighting. Though I am not sure how that method could be applied to a gigantic scope such as in the OP image.

Why doesn't this art style exist in video games? There's got to be something about it that makes it tricky to pull off. Like is it LODs for the billboard trees? Some type of shader used for distant objects so they don't shimmer as their pixels move around?
I'm aware the video is AI, but it's so captivating, and (probably) deceptively simple.

There's plenty of indie pixelslop.
If you mean 3D environments built with sprites is because on rotation the parallax sprite backgrounds will look fake as hell (not to mention the fact that you should be able to get there eventually), so the best you can do is a filter.
