They went out with the other PC centered genres that couldn't easily transition to consoles such as RTS and sim/tycoon games.

Production costs kept creeping higher (you needed either a CDs worth of high quality 2d animation or a CDs worth of claymation or 3-8 CDs worth of live action), and they were slow and methodical single player games that required thinking while kids were going to lan parties to play Quake for an instant shot of dopamine AND multiplayer gameplay.
And 3D games started getting bigger and more open. Like you have Myst on one hand and Tomb Raider on the other, which one do you think will impress people more?

It also didn't help that the most ambitious point n click games were insane gorefests like Phantasmagoria 1-2 or Harvester.

They stopped being made to be challenging and started being made to annoy you/waste your time. Near the end the puzzles were getting fucking ridiculous.

They were replaced by the telltale style cinematic narrative "adventure" games
Then their whole company got mismanaged by huge retards and their model was already kind of unsustainable
Seems like the whole cinematic narrative game also died because they were too expensive and didn't sell enough
Now adventure games only remain in niche 0 budget European games like God intended

Point and click adventures were the peak of technology when they would release. They used more advanced graphical techniques. They were some of the first games to extensively use voice acting. They were some of the first games to use actual music instead of chiptune. They were the games that had extensive storylines and highly developed world building.
Now all these things are standard in games.
