You can see weird squares in the walls that make it look like it doesn't properly tile (no idea why they would do that) and also the transitions between the darkest and next darkest color in the wall are abrupt and shitty.

i have a giant autistic gripe with this game. you can't roll when you're walking about, and i just can't get myself to play it for longer than the tutorial dungeon

They are fine.
Only ones i'd say are bad are Deku Tree and Dodongo Cavern and they are mostly tutorials.
I agree later games have dungeons with more fun gimmicks, but OoT ones are not bad at all.
