The SR1 literally doesn't have a shitter or any other basic living requirements a ship would need for LONG TERM STEALTH RECON. It's internal design effectively makes it an oversized fighter craft that needs to dock constantly or else there's gonna be some real problems. It does not even remotely possess the basics a craft of its design would need; so much so that they literally had to retcon doors and escape pods into it that can't physically exist. Go ahead. Show me where the escape pod hallways and access hatches are inside that thing in ME1.

Enterprise D was supposed to show that the federation was in peacetime. It being big and impractical was important from a worldbuilding standpoint.
Normandy SR2 was supposed to be better than the first one because it got one hit ko'd by a bad dragon dildo. It was about showing that everything is being invested into winning the war rather than bureaucrats and wagyu. It sets up ME2 as a more serious and direct go getter game rather than a go find some evidence in the back of a strip club so you can grovel and beg to be given permission to go get the baddie.
