Believe it or not, that was the best outcome
I know, I know, you got that tingling feeling of anticipation again
But that feeling belongs to the past
Maybe you could recreate some form of it if you started a family and had kids or something
But we both know that past a certain age, past a certain threshold of expected responsibilities, an mmo shouldn't incur those feelings anymore

It was only an illusion
Had the servers worked, that feeling of excitement would've inevitably collided with the stark reality

What the fuck are you going on about? WoW is fundamentally an extraordinarily good game with just about everything about it being stellar, from the big items like atmosphere and responsiveness of combat, down to the smallest details like the formatting of tooltips or the use of atmospheric fog effect. Why wouldn't people into that kind of games enjoy a fundamentally extraordinarily good one? Besides, the typical player probably already has played on several if not dozens of servers, so it's not like they are chasing some half-forgotten dream from childhood, but they know exactly what they are in for.

I personally skipped launch (partly because this was somewhat predictable) so I didn't look into it until a couple of minutes ago, but looks like the popularity of the server took the developers by surprise, there were lag and login problems, so they temporarily took the servers out so few players getting in couldn't race to 60 while most players are sitting in queue. Pretty usual stuff, the majority of (new) servers don't launch without these sort of issues, usually they get sorted in a couple of days.

No idea, but if experience from other server launches is any indication, usually it takes no more than a few days for things to get (mostly) sorted out.

Undoubtedly engineering +1 for PvP. For PvE, I don't see the exact list of recipes so it's a bit of a guess, but they seem to have gone the WotLK route of having belt buckles/cloak embroideries/armor kits/ring enchants providing "identical" bonuses for all trade professions, while gathering professions only provide utility. Which of course weren't completely identical in Wrath (e.g. JC would give like +2 spell power in raw stats, besides the fact that it could also boost stats like strength, which could be about 1.3x more valuable for some specs than raw AP) and probably there are edge cases here as well, but given that there's probably BoP gear too, LW seems like a safe bet, and then a second trade profession of your choice.

Or, since it's not like you have the gold to buyout markets initially, LW+skinning, and then pick the second min/max trade profession when you are better informed.
