Redguard + longblade for an easy start, or an orc. Dunmers are pretty straightforward too. Breton for an easy mage. High elves for some glass cannon mages. A high elf atronach with a mantle of woe is extremely fun. Until you get hit by reflect

Whichever you pick, don't try to hit enemies when low on stamina or using a weapon you don't have at least ~40 skill with. That's pretty much all there is to it.
