what's there to add that couldn't be covered by a weapon type specializing in it? guard counters go basically unused by anybody but NPCs in elden ring and it's the first addition to, specifically, basic combat, since plunging attacks (read: attacks while falling) in DS1

Why would you change your game when people are clearly still buying them, speaking highly of them, and they're consistently growing in popularity compared to their previous games

Call it desperate and reaching but I like how Nightreign has distinct characters with their own abilities, which add quite a bit of depth to each character. They finally bothered to give characters different heights and they've lazily solved grabs by making it so that you do an extended dodge if you do them. It's all very minor stuff and their boss designs continue to get worse, but it makes me look forward to whatever game they make that isn't a Souls game.

I always thought the idea was having lots of builds, magic, items, abilities, online, etc to toy with and the variety and depth came from that. But everyone just does the same build and fights every boss the same way no matter what and ignore most of the mechanics and tools and then wonder why things get boring.

It's not required to add depth but bosses have constantly been getting buffed in speed, combo length and trash delayed attacks while players have the same speed and tools since bloodborne. that's the problem. the playing field is skewed towards bosses and that's what makes it unfun.
