The difference is those games have ELO, I.E. balancing so that there's a legitimate competitive element to them.
Final Fantasy and most JRPGs in general don't. They're just fucking VNs, and you can't even actually RP in them either.

What was fun in early Final Fantasy was the customization systems. FF6 is not a good example of it. 5 is, 7 is, even 8 is. 9 and 10 were a bit more rigid but still had decent options too.
The fun in these kind of systems is trying to make a build that is powerful but can also adapt to new challenges.

5 has some of the best character building in the JRPG genre, and while Final Fantasy combat has never been great, 5 is at least more interesting and challenging than most of them. In terms of pure gameplay 5 is easily better than 4 and 6

Square thought it'd be too hard for our audience at the time, which is why we got the easy version of FF4, and "Mystic Quest", which was even easier. Meanwhile FF6 comes out and the only thing 'advanced' about it was the Esper system.
