Making a board game, not a vidya. Then I'm opening my own little board game store/Cafe. Every other week I'll have a night where I teach a new board game. One of those a month will be for a light game, the other will be for a heavy game. Then I'll kick back, run my little shop, and play board games all day.

"Sins of the Father", an HD 2D JRPG with classic FF gameplay. You play as the king of a nation; an ancient evil awakens and you need to stop it, so you take your advisor, and your 16 year old son aboard a ship and sail around to different continents to forge alliances. Wherever you go you're presented with choices; do you ally yourself with an island nation with a powerful navy that also practices ritual sacrifice? What about your neighboring nation that you've been locked in a cold war with for the past 20 years? These choices will determine who you get as party members, and how ready you are to take on the Ancient Evil. All the while you'll also be presented with moral choices through side quests; do you kill a thief in an alley after they attempt to steal your wallet, etc. Your son will watch everything you do and comment on your decisions, and ask you why you made those choices.
Fast forward to the end of the game, you take on the Evil with your army, and depending on your choices you thoroughly trounce him OR you just barely get by by the skin of your teeth, and you get an ending. Fast forward 20 years, and your MC (the King) either gives the throne to your son OR passes away (choices). As soon as the son ascends to the throne, you're presented with a moral choice of a villager whose land has been taken for the Crown. Surprisingly, the new King answers for you, with the dialogue box you've been using the whole game cracking. Based on the choices you made as the King, your son will now carry on his legacy and rule like he believes his father would rule. That night, the ancient evil awakens AGAIN, and now you've got a new story where you have absolutely no control of where it goes and just need to hope that your son makes the right choice. There's also an unlockable mode after Part 2 ends where you can actually make choices and choose dialogue options again.
tl;dr, Final Fantasy with Mass Effect 3's War Readiness system but less shitty

You run a workshop in a town at the base of the tower and can use materials you harvest in the tower to create equipment and consumables which you can either use yourself or sell in your workshop. The NPCs are recruitable and can either join you in on a dungeon run or they can stay at your workshop and run it for you while you're away.
There'd be checkpoints so you don't have to climb all 1,000 floors in one go, but floors 850+ don't have any so the final stretch is a gauntlet.
