Why doesn't Nintendo innovate and push their hardware to the limits anymore?

Home consoles died in the early 2000s, there simply was no point when home computers became cheaper, more powerful, more versatile and more easy to use. Everything after 5th gen was just constant stagnation, trying to keep investors on board and scraping the bottom of the barrel.

not enough long loading times, blurry 240p video and hilariously bad voice acting for you, tranny?
There's a reason people still like N64 games to this day while pretending PS1 games don't exist

Because it's not viable.

Sony crushed SEGA during Saturn/PlayStation due to the fact that Sony have their own factories manufacturing chips. SEGA and Nintendo had to pay other companies to get chip sets.

This lead to the N64 hardware being so expensive that Nintendo had to omit an optical reader and go for cartridges to save costs and put the N64 in the same price range as the PlayStation.

And then Microsoft came along.

Simply put, going for the most powerful hardware is very expensive, and Sony and Microsoft can always do it cheaper and better than Nintendo.

Not many people bought an N64 and nobody bought a Gamecube.
But they did buy a Wii, they did buy a DS and they did buy a Switch.
