I love Lego Games! Oh boy!!! I love having to play the entire game to unlock the "this guy breaks the red/black bricks because he's a bad guy" character!!!!!!

Most of the time you can unlock those characters a few hours into the game by buying them with studs.
Like in Lego SW TCS, if you want to interact with dark side objects you can do so as soon as you finish The Phantom Menace by purchasing Darth Maul.

The only LEGO game I played was Indiana Jones 2, and I really enjoyed the classic Zelda like approach of it where characters can unlock secret areas in previous levels. Was that just for that game, or are there more LEGO games like that?

All Lego games have characters that can unlock certain parts of a level and new puzzles with their abilities, its been there since its inception with Lego Star Wars: The Videogame.
