Leon doesn't die and then have Ashley replace him as a main character though. Plus I wouldn't really consider it a father/daughter type relationship anyway. Ashley even implies at the end she would totally fuck Leon if she could.

I haven't played the Last of Us but I imagine Joel sees Ellie as a replacement daughter so he'd be weirded out by sex with her. The same goes for Bioshock: Infinite except they kind of fucked up on the execution. Since it's first person you don't really get much of a sense your character is much older than Elizabeth so lots of players assumed they'd be love interests until the twist reveal at the end that he's actually her dad.

I feel like Druckmann is the type of guy who would constantly be trying to worm himself into Hollywood's inner circle what with his game becoming a TV show, yet he'd fail at every turn.
