They don't. I never want to see my FPS, because I think it'd be distracting. HOWEVER, I do play with my ping visible in Dota 2. It's really important to know whether I'm lagging or not. The people who play with FPS shown are just flexing on you.

If this conclusion is based on Youtube videos people there often display performance data as it gives viewers numerical values about the game's performance.
