Burittos aren't authentic Mexican cuisine, they're tex-mex slop with flour tortillas. Anyone can make a burito however the fuck they want, and it's not any more or less authentic compared to a burrito made by a Mexican. Just make your burittos with ingredients that suit your palate. White people might put sour cream and cheddar cheese in theirs and that's fine if it's what they like.
I'm Mexican, BTW, and I source my flour tortillas from Costco. The uncooked ones, they're less dry when you cook them yourself in a pan or skillet, just make sure the temp isn't too high or they flake up.

We eat our leftovers with corn tortillas generally, either hand made or store bought. You'd be hard pressed to find someone making their own masa from scratch, so you really gotta stretch what the word "authentic" means in the modern world, to the point the term is arbitrary. The only time it's not is when classifying specific dishes, because you can certainly still cook Mexican dishes the old way, but there is no "old way" for burittos, because they're not wholly Mexican or old.
