What's the best, most enduring fighting game from any of those consoles? Like obviously MvC2 and Third Strike are exceptional games, but they were Arcade games ported to console. The FGC community doesn't associate them with the PS2, those were Arcade cabinets first and foremost, and Third Strike Especially came out on console at the end of the generation. The premier fighting game on console for that generation, and the most popular of them today by an order of magnitude, is Melee.
What racing game has held up the best? It's F-Zero GX. Stuff like Gran Turismo, PGR, Forza... all have significantly better entries and feel a bit jank to play now; I played way more PGR as a kid, but nowadays I don't even look in that direction.
Best Metroidvania from that Gen? It's Metroid Prime...
Best platformer? It is Sunshine. Games like Jak and Daxter or Sly Cooper are great in their own right, but Sunshine is significantly more popular despite having a much lower and I certainly enjoy going back to it more. It sold about as much as say Jak 2, but is way more memorable. The only actual competition Sunshine has is Psychnonauts.
It's just a matter of fact that GameCube games have endured better than PS2 or Xbox games, both on average and amongst the greatest games of the era.
