Why is the indie horror scene so much more obsessed with recognizable mascots compared to AAA horror?

Because the people making mascot horror games are the same zoomer faggots who were band kids/theater kids back in high school/middle school when FNAF took off. Buncha uncreative troons obsessed with tumblr/newgrounds aesthetics.

if your game takes off that's a lot of potential money on the table for relatively little investment, you don't even need an actual story since you can let lorefags fill in all the blanks for you

Spooky's gale feels more like an parody and shitpost than just an horror game, creator just throw random shit you have to run away from.
