The options in the pause menu are all locked but you can see an "upgrade" option there. Each weapon has moves that are unlockable in their own skill tree. I'm sure a lot of people just mashed square in the demo without even trying to learn their moveset. I like to experiment so I found most things though. Greatsword has a parry that's done by pressing square immediately after triangle which even I didn't discover in the demo which is why it would've helped to make the movesets more visible.
