Soldier of Fortune 1 had some good ones, I remember enemies would do a little "dance" when you killed them with rapid fire weapons, so I would empty entire SMG mag in one dude and he'd just keep shaking. Brutal.

I remember as a small child seeing the first level made me queasy but by the second level where you get that machine gun we were completely desensitized and it became great fun

Borderlands 1. I prefer 2 in pretty much every way, but 1 had better elemental death animations. Enemies would dissolve into acid while screaming in pain. Perhaps it was a bit too much, so they toned it down in 2.
