You might want to check out previous Expeditions games as well then. Rome has the highest scope and production value of all, but it sounds Viking would really be your cup of tea. That really tells a tale of a small, tight-knight group on a crucial mission which runs in parallel with the protagonist's personal story. You have a Homestead to upgrade and maybe Crafting but that's roughly it outside of the main and the few side quests. After Conquistador it truly felt exploration took backseat to storytelling. You have some influence on where and how fast but eventually the direction is set. There's also a timer (if the devs didn't remove if eventually) but it's so extremely generous that people freaked out over nothing.
Rome has 3 distinct chapters and major decisions are usually made at (or near) the end of them, and while the number of outcomes are limited they're impactful enough to be able to safely get at least two playthroughs out of the game. Tip for char creation: pick Triarius with main focus on the Destroyer tree to minimize overlap and maximize efficiency. That's precisely what's missing from the companion roster. Just don't forget to round out with useful skills from another trees. There's also a Legion building feature as well as simple, card-like battles with them. So as you can see it has more things going on than Viking, if I were you I'd try Rome now then grab Viking when it's cheap.
