Can someone clarify for me if the unlockables in these games are permanent (infinite colt, rpg, key for costumes, etc), or disappear after a single playthrough and need to be re-unlocked?

I think after every game completion it asks you to make a new save and loading that save starts you fresh with the new unlocks. So just don't overwrite that save.
