Nu in this contest refers to the word New. It is meant as a separation between the old and new. For instance since you posted Remake tifa she is classified as Nu Tifa due to her design and look. A good way to see a comparison between a Nu version of a character and there Old version would be the base design and how the character acts. An example of a Old Tifa that was made in the Remake era would be Dissidia NT Tifa. She has the look of the Old Tifa and acts like her as well. Many people actually prefer how Dissidia NT Tifa looks cause she so closely resembles how she was originally.
