Three reasons:

We, Earth, are in a near-perfect habitable zone, so we are able to have that wide variance. It's all based on how common it is for water to be liquid, as opposed to gas or solid. If a Earth was even a few light-seconds closer or farther from the sun, we'd have a lot less varied environments.
We only experience Star Wars through the eyes of protagonists, meaning they're where the action is. You'd never guess that the planet the clones were made on had a fuckton of landmasses, since we only see them in the ocean-secret-liar, but it does. What we see isn't always the whole of it.
George Lucas, and many writers, don't know how to make detailed geological and environmentally-sound fictions.

Is there some software solution to this? Like, you can generate a "normal" world with Dwarf Fortress, but something that allows you specify a planet with a bunch of moons, or all the plants are intelligent & mobile, or one after a Death Star blasted away a chunk of the planet, or other sci-fi variables.

Dantooine is a planet of the ol' timey midwest pioneers and farmer, with all the good and bad with it (Bandits raiding, farmland disputes, fucking random ass animals attacks) Alongside the religious magic the gathering temple that's gonna blow up sooner or later
