In theory couldn't they try what RWS did with that one Postal 2 expansion released 12 years later and finish The Third Encounter on the original Serious engine with the help of a few modders? The maps and puzzles were mostly finished beyond missing enemy and item spawns iirc

Before Serious Sam 2 Croteam was working on The Third Encounter, shelving it in favor of making a bigger budget game on a newer engine. They returned to the idea during the HD era but cancelled it again. Unlike Serious Sam 3 it would've concluded the story, so that might be why they avoided ever finishing it

If you look into the alpha of the original you can see which maps went into TFE and TSE respectively, leaving an entire third category of forever unused maps (excluding the multiplayer levels and secret levels)
I think there's a mod for the original that polishes the Third Encounter levels into something playable but I haven't tried it myself.
Unfortunately the only big Serious Sam forum shutdown and migrated to a Discord I can't be bothered joining, but you could find more there I assume.

HD versions are fine. Lesser in a few places, prettier in others, but fine.
2 has a bunch of weird decisions, with more weird options patched in recently. Decent entry, might be unpalatable for certain stylistic or gameplay reasons.
BFE is a pretty bad game with some redeeming qualities. Play only through Fusion, that version is tuned and expanded for the better. Maybe slap some redux campaign mod if you are unsatisfied, but still invested at this point.

Double D and Random Encounter are spinoffs, didn't play.

It doesn't get as bad as 4 and still has tons of good parts like great eastereggs but the NPC companions that were already disliked in 4 and the often mindless chaos that boils down to "just hold down the fire button and watch legions of grunt enemies explode" detracts from the rest and basically turns what was like a 9/10 up to this point into a 6 or 5.
