The Fight against Gwyn was absolute kino. Boss Fights don't have to be difficult to be interesting. I had full heavy armor and a dragon head (because I was fucking around) and a heavy +15 Zweihander. Gwyn and I just traded hits like drunken madmen, who are beating the shit out of each other without making any attempts to dodge. We were equally matched. Actually my hits did more damage and I had easily more health than him with all of my estus flasks, but it still felt like an epic fight. The new Dark Lord vs the old Lord of Cinder. If the fight was more difficult than my character wouldn't have the right to rule, but he did and Lord Gwyn was easily outmatched.
