Night Elf women kidnap the men of other races on a basis defined by the lunar cycle, specifically going 'on the hunt' on a New Moon. Particularly, they often go after Tauren men due to their impressive stamina, though capturing one can often be difficult.
The NElf villages will then keep the males in a drugged, semi-awake state for several days, each woman having at least one session with one male to attempt impregnation. Due to Elven genes impregnations are rare, but will always result in a Night Elf child.
Following this the captured males are dumped on the edge of Ashenvale and left to fend for themselves.
This is why when Thrall first meets the Tauren in WC3 they're a nomadic people who warn him to stay away from the forest; they've recently been hit by a Sentinel Raid that took several of their warriors and left them vulnerable to Centaur attacks.
