Aaron Paul could probably pull off something pretty well, when he's given actual direction he's a pretty good VA like with Robert in Dispatch, when he isn't though I think he just ends up sounding like Jessie (Powerplex) which messes up immersion a lot. When you're writing a character that is supposed to be faceless and be anyone, you need strong characters around them or the whole thing is flat.
With the Witcher, although you can make some decisions, they're all decisions that Geralt might make. Geralt is a fully realized character before he's a video game protagonist. So you don't need those strong supporting characters just to make the plot work.
