Deck "themes" are a meme, what you actually do is pick strong cards relative to your position in the run and then it ideally forms into something later. The way the game works you will typically converge on some kind of strategy.
Act 1: pick almost exclusively attack cards early, then look for AoE as you get near the end of Act 1. It's normal to be hitting the boss with only 20-30 health and already have a build that can deal with it. Health is a resource and it's "spent" on elites, which counter skills so that's why you go for Attacks.
Act 2: AoE is super important, so focus on that early on whilst looking for some kind of power scaling along the way. You can try elites but you want a way of dealing with both Stabby Book and the gank squads. Strong defensive cards like Shrug Off, Dash, Leg Sweep, etc. become value as well.
Act 3: Rounding out your deck, ensure you have decent defensive options, play carefully. This is where Powers are often popping off, or relic sysnergies. Elites might have Reptomancer who is a cunt and you usually don't want to fight, so be mindful. Try to sure up ways to deal with the Act 3 boss so it's not completely countering you.
As a general rule, a strong early card is something that Attacks and Blocks simultaneously, or of it costs 2-3 energy but does a big Block or big Attack, and anything cheap AoE like Cleave that will take care of Slimes, Gremlins and help with early Act 2.
Ironchad usually wants some variation of Exhaust, Strength Stacking or Body Slam Barricade.
Silent usually goes defensive, poison and the occasional Shiv deck provided you can counter Time Eater.
Defect is easy, you just spam Lighting and Frost Orbs with focus, and go for Power Spam wherever the opportunity arises.
Watcher is braindead with anything really.
