You're acting like that world design was somehow done to save time designing what the mixed race babies would look like.
This is a game with literal Lizard people, cat people, and elf people. These 3 completely different trees of evolution all have to coexist as sentient beings in a gritty/realistic fantasy world.
Mixed babies wouldn't' just be thematically inappropriate, they are literally biologically impossible to exist.
If a cat tried to fuck a lizard in real life, it doesn't work. Not because God was too lazy to make a mixed-species baby design, but rather because they are too far removed from each other biologically that combining their DNA is impossible. Even if both these creatures were humanoid and sentient, these differences still would exist, as they do in Skyrim.
This is why mixed race babies canonically exist in TES lore between human races (like nords and redguards), but not between elves and humans or cats and humans and so on.
