Here's the general plot and ending.
Dess is the roaring knight, no one is surprised by this and if this ends up not being the case it'll be really stupid. Carol, Kris, and everyone involved with the bunker is actually trying to save Noelles life, Kris was the one who owned the well in the school and dragged Susie in because he needed to find a replacement for Noelles role in the roaring, so he picked his bully because fuck her. Except whoops he actually grows to like her and now has cold feet about his sacrificial lamb. As far as Carol is concerned it's still go-time. What Carol isn't telling Kris is that she isnt just using him to save Noelle, he's using him to save dess. The soul is needed in order to make the crossing from the dark world to the light, and what she wants is to give darkner dess a soul so that she can exist in the real world, but shes not ready to receive it yet so it has to cook in Kris for a little bit. Ultimately, the roaring is being caused by the knight, so the knight HAS to go. Likely one of the girls needs to be sacrificed as well so the other can be the one to defeat the knight with the hero.
Normal ending is Noelles sacrifice
Weird ending is Susie's sacrifice and everyone being very unhappy but hey at least the roaring is gone.
Super secret ending is a halfway between weird and normal to get all the things in order to fight the true titan and master of the roaring plan, gaster, in which Kris becomes the sacrifice, leaving everyone happy and allowing Noelle and Susie to have their lukewarm middle school tumblerites idea of a sapphic relationship because toby is a male femanist who thinks men are evil if theyre not gay and the best thing any man can do is die for everyone else and never have sex ever ever.

Chief of police also had something to do with the shelter, likely having code access.

Sans is the Roaring Knight it's an alternate version of Sans using the time machine however time travel in this world works like dragon ball time travel in that it is a time travel you just go to a different dimension in the past and create a new alternative reality where events play out differently Sans couldn't handle this and felt there must be some way to fix the timeline so he kept going back to the same day 12/25 until the time machine eventually exploded causing the reality to warp between light and dark and now he's the roaring knight
