The first thing you should focus on is Shadowlands covenants because you need all 4 of them for all content even if you can't use items cross covenant. I'd finish necrolord first because it's very annoying.
Focus on other expansions only during timewalking for that specific expansion. For example you can finish all tbc reps in a week with the timewalking buff

i've played every tank and guardian has by far the harshest, most punishing talent tree for no reason. prot warrior? i get everything i want from all 3 paths. prot paladin? pretty much everything i want is right down the center with only a little bit of choosing at the bottom. blood DK? i get everything i want, only missing out on some minor utility and situational throughput on the sides.

so you can see that guardian has about 5 more empty nodes it wont be able to take than other tanks, and on top of this it needs to dump 5 points into berserk to make it worth a damn, so in reality its about 10 talent points less to play around with than almost any other tanks spec tree, so while other tanks are picking up all of their procs and secondary mechanics, we largely have to skip vast swaths of them because if we dont, we wont be able to pick up our primary defensive cooldown rotation, which is not the case for any other tank
