Thereโs this idea in the English speaking fanbase that the twins or Gaku are a lot more popular in japan but they arenโt. Opinions on specific characters and routes are very similar honestly.
Twins got a lot of attention prerelease and get fanart because their designs are cute but they donโt really do anything in the game so their actual popularity really dropped off.

Hiruko's character is really all over the place. Atleast with Uchikoshi she leans more into a tsundere submissive wife which I... dislike, but it's more consistent and sensical than whatever Kodaka envisioned of her. I love her dynamic with Takumi but I'd have loved her to not show interest in anyone only to find out later that's shes an experienced Yuri Practitioner, it makes sense with her novel backstory of being a really popular host... but she's also a dominatrix and whips sub men, so she's just bisexual I guess.

I don't think there's any one particular behavior that "marks" someone as a dom or a sub. The one holding the whip can be the dom or the sub, it depends on the holistic emotional dynamic.
Hiruko was the one in SF who was generally more confident, showed more agency, made more decisions, etc, so she was the dominant one. But even if there were times where Takumi took charge, that's fine too and it doesn't make her less of a dom, because doms don't have to be 100% in charge 100% of the time.
