Chapter 3 and 4 (especially 3), the schizobosses were so out of left field and unrelated to their chapter's element, that trying to guess what Chapter 5's boss will be is borderline futile.
That being said it seems the recurring element of each boss is "a bossfight that Toby has always wanted to do", like a real mettaton neo fight, a real gerson fight, and of course Jevil and the Knight are clearly something he's had in his head since 2012.
Plus, the boss fights seem to also all have some sort of relation to the weird route (jevil wants to massacre everyone, spamton gives you the thorn ring, the shadow mantle, and even Gerson tells you to "go between the lines")
So, I am going to guess that the secret boss of chapter 5 will be an actual Flowey fight. You never got to fight Flowey properly in Undertale, you either fight him as Photoshop Flowey or as Asriel, but you never fight him one on one.
