Horses play with each other by running, but in nature when horses move in packs they typically don't want to separate from each other too far, it's survival against predators, it's the job of the jokey to train the horse to break from that instinct.
Also horses recognize what a "race track" is, the gate, the people cheering, etc, after a while they recognize the situation as "I'll run a lot".

This race is in-game and getting the trophy in the first week of the game is hard because you need a dirt horse who can do medium races with no target race at late june of senior. Only Maruzensky is the close choice at Dirt D but you need Dirt sparks to inherit
