Answer is no, Foxy was not replaced, and in fact he keeps doing appearances in the VR Games (Help Wanted 1 and 2) or small cameos (in Security Breach, the one where you say he gets "replaced by a wolf oc", still has signs and cardboard cutouts of foxy all over the game, as the wolf oc is just a different new animatronic) And he also does an appearance in the latest game "Secret of the Mimic" which is a game set in the past where Foxy was just a puppet in a puppet show (that you get to see and participate) and in that show it is also explained the wolf girl OC was just part of his crew.
I recommend you to watch some gameplays because you probably are not interested in actually playing the games, but the wolf OC, Roxanne Wolf, is a very fun character once you get to see her in action, same with the rest of the Security Breach characters.
