The difference is that Trundle is much easier to deal with around all the phases of the game: you can cc him easier, you can lower his attack speed, you can lower his heal and his damage is spread mostly around how long he'll AA you.
Mundo isn't. Mundo has a spellshield, the only reliable form of cc is a slow, he only needs to give a couple of AA to your squishy and has high survivability around the lategame. Yes, maybe you can stomp him in earlygame, but you have to win the game before he begins to stack health. The moment he stacks health he becomes troublesome.

I still don’t know how I feel about the yorick rework. It’s nice being able to comfortably win most lanes or at least neutralise but not being able 1 shot squishies with ghouls or steal camps while I’m lane feels pretty garbage. The worst part is they probably won’t revert the changes because they finally managed to make him viable in high elo without making much of a difference to his wr in low elo. Tragic stuff

I played some Arena to relax and this round was kinda fun
I started off with Dual Wield(Your autoattacks shoot another weaker auto attack that does 40% damage) then got Symphony of War(Conqueror+Lethal Tempo) then got Scopiest Weapons(+150 attack range) and final augment was Firebrand(Applies a stacking %Max Hp burn every auto)
for my prismatic i got Reapers Toll(Each auto attack does a slight amount of max hp true damage and it increases every auto up to 50% max hp true damage per auto at max stacks)
I just went Guinsuoo+tank items after that because i already had crazy damage just from Augments and Prismatic so even if enemy reach me they have to go through 5k hp and 250 mr before i kill them

That's partially a stereotype however. In higher ELO but more in pro play, players are more risk averse and easy champs are generally safer to play but are also weaker, in terms of how much you have to do to deal with them. I assume in pro play they use a very different game plan where even a champ with an easy kit can be of use in some way, it's always about skill expression. Maybe you are playing an easy character but there is another aspect of the game you excel on, and that champ works well with it.
