In Ritsuka's case I like that, going into the Lostbelts, they're characterized by an element of being crushed under their own sins that they need to commit to save their own world, and I'm a fan of some of the ways that's presented (it helps that I'm specifically a Jack fan and they, interestingly, gave her dialogue that basically points out you look depressed but only triggers if you're in the Lostbelts). Otherwise I find their lighter hearted traits (love of mecha, generally being hyper lawful good to a fault) to be entertaining enough.
Wouldn't call them the greatest character ever, I'm just fond of them.

It's also because sometimes stuff happens out of chronological order as it's written. A setting could take place in 2030 while being released this year but a game that comes out after could take place in 1902 while coming out next year.
The "rule" of servants not retaining memories is explicitly for out of universe reasons and thus is only used when convenient.

The only 'mandatory' character is Castoria because of how broken she is for pretty much all content, including farming. Koyan is buster farming comps, which need more investment, and Oberon is also more specialised for farming. You will note how much I say farming, that's because you can beat the story with just about anything paired with friend support so this is about the only thing in the game to optimize.
Seriously, don't worry about it. A better way to go about it is to look at servants, see which ones you think are nice, and focus on getting them and their relevant support based on their NP type. since you like TM stuff and already saw shit on youtube you may have an idea on who you like.
