For actual races you want like 1400-1500 stamina for 3200+ length races.
So you're pretty much trying to max it together with recovers always.
Power is still important, but since the races and the last spurt is slightly longer it's not as punishing as it is for sprinters.
Focus on hitting the Stam first and decent speed second.
600+ is also just the target for spake farming. So if you spam careers you might as well aim for that.

Racing has a lot of RNG elements, if one of your horse is unable to win at all you reduce your success rate way more than you get from the support it provide.
