Other Absas online mostly seem to try to abuse her uair, but for some reason I don't and mostly want to abuse her up-b into fair/nair (with cloud setplay overuse of course)

I've played enough of 1.2 and 1.3 to decide that I just fucking hate floorhugging and don't think it enriches the game in any way. They need to rip the band-aid off. Nerf floorhugging so it only works at low %s WITH the knockback reduction from crouch-canceling. Floorhugging should simply stop being an option against even the weakest options at around 60%. It's like the inverse of Ultimate, where at high %s stocks devolve into both players throwing out safe, auto-cancel aerials to fish for stray hits. At low %s, you're forced to fish for options that beat floorhug because anything else just gets beaten by... holding down.
At the very least, they need to make it so you can only ASDI down in certain states.

The recovery is quite predictable and once the doublejump is spent it might as well be over.
Its hard to really poke shield as maypul, On shield nair is not safe at all. I struggle vs clairen's and wrastors bair

By playing patiently and forcing her to use riskier options to get in against you, you're refusing to play into Maypul's bait-and-punish playstyle. I'm not saying to play passively; patient is not passive. You want to play patiently for stage control: slowly box Maypul into the corner, restricting her movement and neutral options, and then try to catch her when she tries to get out of the corner. Ideally you want to catch her out of her double jump, which can kill depending on whether she has seed active.
Maypul is one of those characters who forces you to stop playing your game and project yourself into the other player's head. Like, you say

They're going to want to press dash attack, ftilt, and utilt, and this is what 90% of them do. You can beat a lot of Maypul players by doing nothing but anticipating and conditioning these three options. Dash attack can be punished by anything. ftilt and utilt can be parried. utilt can be baited out and punished with an aerial if they don't adapt and uair instead.

I really like how the emphasis on accessibility lets even an old man like me have a punish game. I couldn't do a lot of what I wanted to do in Melee and PM because of the execution barrier, but here it's just a matter of how fast I think.

Ion is the only Olympia who consistently uses gem for extending edgeguards, and even then I've only seen him do the gem dash into dair / fair on direct hit. Even Cake doesn't use Forsburn's actionable teleport that much. I assume they think it isn't worth it, but it's part of the fun of playing each character.

I feel like great players are much more consistent at not only avoiding gimmicks, but directly countering them as well. A good player knows to FH or DI out Olympia's gem. A better player will either parry, FH and counter, or preemptively intercept the gem with a disjointed normal. The risk:reward is work volatile against a better player, you're risking giving your opponent 3s of invulnerability or a reversal, and you're also less likely to get a conversion off of gem.
That said, there are gimmicks you should always be using. Every one of Kragg's specials. Olympia's FADC. Forsburn's smoke. Most characters' gimmicks are so versatile that I feel like it's easier to overwhelm people with mix-ups than it is to play perfect neutral with normals.
