A Charizard could be anything. A Meganium could be anything. A Serperior is loosely based on a French king, but it could still be anything. Even Blaziken is a bit flexible in that all Pokemon fight, so "chicken that kicks good" doesn't really lock it into a "job".

In our world animals evolved traits to be able to survive and adapt to their environments. However in the Pokemon world humans go out of their way to catch them and evolve them. So having a humanoid body could help give some of them more of an edge.
