Gengar doesn't use any of his stab types. Most ttars only use one stab type. Etc.
Movesets aren't as easy and homogenized pre pss. For better or worse. Crawdaunt for example suffers a ton from pre pss.

Lower standards and power level in earlier games, especially ADV, means you can use a lot more of the options given to you. But you're not going to see anybody running a Grumpig any time soon

No I meant post. I was referring to the likes of Sceptile or Empoleon whose Special stats aren't suited to handling their physical-focused move pools, or most physical Electrics like Luxray. Being mixed is one thing but you need to hit hard enough in the first place to justify a good mix set like Infernape. It's a disjoint more common in Gen II-IV mons than nowadays since lots more mons are minmaxed though sometimes something slips through the cracks like Dedenne's movepool
